Honey is a sweet and natural product of high nutritional value, produced by honey bees (Apis mellifera) composed mainly water carbohydrates, nitrogen compounds, enzymes, organic acids, amino phenolic flavonoids, vitamins, minerals other phytochemical substances. For cultural reasons, it widely used for therapeutic purposes various. However, despite this factor, the most fraudulent food in Brazil. On hand, also marketed many places without any control, with appeal "natural product". Due to its composition can form compound called 5-hydromethylfurfural or HMF (a furanic ring functional groups aldehyde alcohol), classified as an molecule from degradation sugar after Maillard reaction that has harmful effects on consumer´s healthy. The main objective study was monitor quality honey, consumed broadly increasingly population and/or medicine. We analyzed 34 samples labeling type inspection (US - unregistered samples) obtained commercial establishments unlegalized vendors region between cities Itatiaia, Resende, Penedo Visconde de Mauá, all Rio Janeiro State; 20 had label identification (RS registered samples). Aiming compare two groups, relevant analyses were performed: pH, Lugol test, Lund color especially 5-HMF. It concluded low-cost physicochemical be ensure fraud-free there no presence at concentrations.
